Sweet potato bowls with lemon mustard dressing

Serves 2


1 pack Wildly Good Kimchi style Sweet Potato burger patties
Handful leafy greens such as kale or spinach
1 avocado, sliced
100g cherry tomatoes, halved
1 cucumber, sliced
50g red cabbage, shredded

For the dressing:
1 lemon, juiced (about 1/2 cup)
2 tsp dijon mustard
1 tbsp extra virgin olive oil
Pinch of salt to taste
Pinch of sesame seeds


  1. Cut the sweet potato burger patties into bite sized pieces. Place them inside a non stick pan with a bit of olive oil and heat on medium heat for 4 to 5 minutes on both sides, until they start to brown.
  2. Cut the avocado in half, slice the cucumber, tomatoes and grate the cabbage.
  3. To prepare the dressing, mix the lemon juice with mustard, olive oil, salt and sesame seeds in a small bowl until smooth and creamy.
  4. Assemble bowls by adding the leafy greens, avocado, tomato, cucumber, cabbage and top with the kimchi style sweet potato patties.
  5. Drizzle with the lemon mustard dressing and enjoy.
