One pot sausage and rice with Wildly Good Sausages


Makes 2 serves
Wildly Good Pumpkin and Caramelised onion sausages


1 tbsp extra virgin olive oil 
2 cloves garlic, chopped
2 green onions, chopped
1 red capsicum, diced
1/2 bunch broccolini (100g) chopped
1 small can (210g) diced tomatoes
500ml vegetable stock
1 pack Wildly Good sausages in Pumpkin & Caramelised onion flavour, chopped
250g basmati rice (WE used microwave style)
1/2 tsp turmeric and dried paprika
1/4 tsp salt and pepper 


  1. Heat the oil in a large pot on medium heat. Add the garlic and the green onion and cook for 1 minute. Add chopped capsicum and cook for another minute.

  2. Add broccolini and canned tomatoes. Stir together and cook for a further couple of mins.

  3. Add veggie stock, sausages and rice. Season with turmeric, paprika, salt and black pepper. Stir, cover and reduce heat to a low. Let it simmer for 35 mins or until liquid has been mostly absorbed, giving it a stir every 10 mins.

  4. Once liquid has been mostly absorbed, stir through and divide into bowls. Serve warm.
