Fresh sandwiches with Kale & Zucchini fritter bites
Makes 2 Serves
1 pack Wildly Good Kale & Zucchini fritter bites 4 slices of wholegrain bread Handful mixed leafy greens such as lettuce or spinach Handful purple cabbage, sliced 1 tomato, sliced 1 cucumber, sliced Sriracha aioli to serve
In a non stick pan, add the kale and zucchini fritter bites. Heat on a medium heat and using a spatula, press down gently to flatten the bites. Cook for 2 minutes on each side until they turn slightly golden.
Prepare sandwiches by spreading sriracha aioli on the bread.
Top with the leafy greens, cabbage, cucumber and then add the cooked fitter bites.
Add slices of tomato and extra sriracha aioli as desired.
