Falafel nourish bowls with hummus

Makes 2 serves

Ingredients

1 pack Wildly Good falafels
1 tsp extra virgin olive oil for cooking
1 avocado, halved
100g cherry tomatoes, halved
1 cucumber, chopped
50g red cabbage, sliced
Handful leafy greens such as spinach or kale
Hummus to serve – store bought or homemade

To make your own hummus, combine the following in a blender and mix until smooth:
1 can (400g) chickpeas, drained and rinsed
2 cloves garlic
2 tbsp extra virgin olive oil
1/4 cup tahini
1/4 cup lemon juice
1/2 tsp ground cumin
Small pinch of ground paprika
Salt to taste

Instructions

  1. Heat the olive oil in a pan on a medium heat. Add the falafel bites and cook for 1 minute or until heated through.

  2. Prepare the hummus in a blender if you are making a homemade one, you can also use a store bough hummus for a quick and easy meal.

  3. Assemble your bowls by adding the cooked falafel bites, avocado, leafy greens, chopped tomatoes, cabbage and cucumber. 

  4. Serve with hummus and a squeeze of lemon juice.
