Bangers and Mash

Makes 2 serves


1 pack Wildly Good Pumpkin and caramelised onion sausages
1 tbsp extra virgin olive oil for cooking
1 cup frozen peas
2 small to medium sized potatoes, peeled and roughly
1/3 cup soy milk
1/4 cup vegan margarine 
1 tsp vegan parmesan
1 tsp Italian herbs
1/4 tsp salt and black pepper
1 cup vegan gravy to serve


  1. Bring a pot of water to the boil and cook potatoes until very tender, about 10-12 minutes.

  2. In a separate pot, bring water to the boil and add frozen peas. Once the water returns to the boil, remove from heat and drain.

  3. Heat oil in a large pan and add sausages. Cook for 5 minutes, turning frequently until sausages turn a golden brown.

  4. Drain the water from the potatoes and mash. Add the milk, margarine, parmesan, herbs, salt and pepper. Mix together until smooth and creamy. 

  5. Assemble by adding a serve of mash potato, topped with peas and sausages. Serve with gravy.
